One room, four jobs
The Butcher's Pantry has served Solon since 2016 and has been Brad Kozar's since November 2024. Buy a thick cut ribeye by the pound, sit down and eat a brisket sandwich, pour a glass of Ohio craft beer and book a caterer for August, all without leaving the building.
What this place is
Not a restaurant with a meat case bolted on, and not a butcher who reheats. The counter, the kitchen, the bar and the catering side all run out of the same building on Station St, staffed by chefs with more than thirty years between them.
The counter
Whole animal butchering, so beef, pork, lamb and chicken all come in whole and every cut gets used. Everything is available by the pound, and the ground beef, sausage and bacon are made in house daily. Custom cuts and special orders welcome.

The kitchen
Sandwiches, wings, tacos and breakfast sandos cooked from scratch by classically trained chefs. The smash burger and the brisket are the two people come back for, and the bread is sliced to order.

The bar
Rotating Ohio taps, wine by the glass or the bottle, and top shelf bottles and cans by the single or the case. Every drink is priced under ten dollars, and the wine sits at the back of the shop beside the case.

Why the prices work
Inspired by Paul Newman's model of giving, Brad donates every dollar of profit to charity. It funds the Little Mountain Animal Sanctuary, which he built to carry out his late wife's dream. Spectrum News 1, FOX 8 Cleveland, the Akron Beacon Journal and Chagrin Valley Today have all covered it.

The Brussels sprout blue cheese bacon salad was also excellent and something I'd definitely order again. The wings were really flavorful, and you can tell the meat is fresh and high quality.
After living in Texas most of my life, one of the things I miss is a really good smoked brisket. This place definitely has it. The brisket is moist & flavorful and it's absolutely worth all five stars!
Found this place due to the reviews when I was in the area. Place is awesome and food was extremely fresh. Everyone that worked there was friendly and helpful. Make sure you try the smash burger and sweet potato fries!
That being said the people were super friendly, and the atmosphere is good, and the to go packaging is cardboard instead of plastic which I love to see.
